National Peanut Butter Day

National Peanut Butter DayUntil today, I had no idea how easy it is to make peanut butter. Not that I made any, but I did look up the recipe and it’s shockingly easy, especially considering how delicious it is. America’s love affair with the protein-packed food has lasted since it was first created in 1890. A staple in every lunchbox, it is consumed in various forms from peanut butter and jelly sandwiches to peanut-butter-covered celery stalks.

One of my worst faults is the fact that I almost always eat frozen food. Working full time, keeping a house, and being mom to eight needy pets doesn’t leave me a lot of time for cooking. And to be honest, I don’t really enjoy cooking that much (unless I’m baking — I love baking!) So it’s no surprise that most of the lunches I bring to work are frozen Lean Cuisines and even my peanut butter and jelly sandwiches usually come in the form of frozen Uncrustables! I think my preference for frozen food might be one of my qualities that irritates Chris the most, though he takes it in stride most days.

We chose not to make peanut butter from scratch today because our pantry is overflowing with food, including a couple of jars of peanut butter. Still, we didn’t feel it was appropriate to celebrate National Peanut Butter day with mere Uncrustables so we turned to one of my favorite peanut butter meals — grilled peanut butter and jelly sandwiches! One of my cousins introduced me to the wonders of grilled peanut butter and jelly sandwiches when we were just kids, and I have loved them ever since. Back then I especially liked pinching the sandwich edges to make sure all the juicy contents didn’t spill out during the grilling process.

Chris wasn’t sure he was going to like our grilled sandwich dinner tonight. As if bracing himself for an indelible supper, he had a couple of scoops of peanut butter with his other meals throughout the day just to be sure he’d have an opportunity to celebrate the holiday. Thinking it might improve his chances of liking the meal, I asked him to pick out the jelly flavor and he settled on currant jelly. It must have hit the spot because, not only did he enjoy his dinner, he asked me to make him seconds! And I happily obliged.
