Carrot cake, which is actually more like a bread, consists of batter, grated carrots, and icing, and sometimes nuts, raisins, or coconut. Carrots have a deceptive amount of sugar and they act as an inexpensive sweetener for this treat. And although they have been used in baking since medieval times, the carrot cake as we know it today did not become readily available in U.S. restaurants and diners until the 1960s.
My parents love carrot cake. When Chris and I go over to their house for dinner, It’s not at all out of the norm for a carrot cake to suddenly appear when we’re through with our meal. And why shouldn’t they reward themselves once in awhile? They’re both in great shape, and as the saying goes, “anything in moderation…”
I enjoy carrot cake as well, but it is far from my favorite baked good. I don’t know if it’s the cream cheese icing, or the texture (I usually love nuts but for some reason I don’t like them in carrot cake), but for me a little bit goes a long way.
After a long day back at work, Chris and I stopped by the grocery store to pick up a carrot cake for today’s “unofficial”. At one point we’d thought about baking one from scratch — baking is just about the only type of cooking I actually enjoy — but I still have the flu so we decided to take it a little easy tonight. Being sick has also suppressed my appetite, so I was pleased to find that Shopper’s had a few 1/2 cake options in their bakery. We grabbed the last 1/2 carrot cake and made a run for it while the night was young.
Knowing how much my parents love this dessert, earlier in the day I’d invited them over to share our cake. But first we had a lot to do! The living room and kitchen were a total mess since I’ve been out of service, and Sage is going through the craziest shedding season of her life. I just could’t let anyone see our house in such bad shape — not even my own parents. Things were looking much better after about 45 minutes of power-cleaning, and by 7:30 we were all in the kitchen chowing down on carrot cake — some of us more than others (CHRIS!). And now that I’m looking around at the clean house, I’m thinking maybe I like carrot cake a little bit more than I did before today.
I wish Mr. Wizard was still around. Tomorrow is Create a Vacuum Day!
